Yeah, I ended up blocking all TCP/UDP traffic from DMZ to Internal again in the firewall module, and then putting rules in front of that to selectively pass stuff again.

Still having some issues getting this going.

Is it possible to enable the DHCP server in Untangle only to be used for the DMZ interface?

Yes, go look in the system packet filter rules list, you'll see two rules there that should jump out and bite you on the rear.
