    Also, I'm running Avast on my desktop. I had my SMTP set to use TLS if possible. I got an alert from Avast saying that I shouldn't use encryption as then Avast couldn't scan the emails, and that Avast would encrypt the traffic. So I turned it off. I haven't verified that Avast is encrypting the traffic, but Untangle is able to see the outgoing SMTP messages.

    Okay, I'm finally able to check my email settings. I'm connecting to my ISPs email server using POP3 over port 110. It's set not to use any encryption.

    Any ideas? Anything else I should check?

    Found the problem. Avast was automatically converting all of my accounts to use encryption.

    Is there a way to have Untangle do this? That way I can leave things unencrypted for it to scan, but have an encrypted connection to the mail server.

    No, you must have it unencrypted if you want the mail scanned.

    It's rather hard to eavesdrop on a conversation when it's speaking in code.

    Well, yes. But it could do like Avast does. Unencrypted connection to Avast. Then Avast does an encrypted connection to the mail server.

    That is a man in the middle hack. It requires the Untangle to be a pop3 server, and a pop3 collector. It's no longer transparent.

    Also, don't forget that the AV product is only capable of hijacking the connection like that because it's ON your machine. It's actually hacking your NIC drivers to make that work. You don't have that level of access over a network.
