Yeah there is no reason to avoid upgrading from v14.2 to v15.0. There is however EVERY REASON to avoid upgrading from 15.0 to 15.1.
I don't like doing OS upgrades on routers unless I'm available to get to said router in a mad panic.

Yeah, the "lack of support" just means you won't be able to restore a v14.2 backup to v15.1. But you can restore a v14.2 backup to v15.0.
But we don't have any apps changing engines so holding onto v14.2 for awhile isn't going to hurt much.

Oh my! Hope this does not go anything like 14.2 to 15.0 did for us. Lots of "mad panic" happened for us on that one, the U25 appliances did not fair well at all. Had to replace a few and do a complete reinstall on some others. Fingers crossed that is all behind us now.

It's not the upgrade action itself but the load of OS upgrade that is final straw for hardware at its end of life that is taken out.

Weak storage devices will appear during upgrade. But... there's also several previous upgrades that weren't actually complete until you manually selected the newer kernel. v15.0 forced the new kernel... and you got to experience why that's a bad idea. v15.1 will be just the same, but if the equipment survived the v15.0 recently, going to v15.1 should be a reboot in difficulty because it's been recently tested.
But, I do still... because it's got a kernel update involved, recommend manual updates so you can pace your own rollout. Or heck, just sit back for a month or two and let someone else finish the final Q/A o the new platform. It's not like Untangle can find all the bugs in the test lab.
