Port relaying instead of forwarding?

We have multiple internet network connection and different gateways for each service. In some cases, we like to expose a server that has a different default gateway set through another gateway.

Our current gateway software supports this by providing an option between:

'Requests appear to come from the originating client' (Port Forwarding)
'Requests appear to come from this Gateway computer' (Port Relaying?)

My reading of that is that it does NAT on the inbound connections so that they come back to the right location.

Untangle does this for port forwarding 'back inside' but not for inbound connections.
