For the most part, as long as it's an Intel based NIC you should be fine. Avoid realtek and broadcom based NIC's.

I finally put an SSL on our box today and the GUI completely borked apache. I could not get into the web interface. So I ended up enabling SSH from the console and fixing it all manually.
Well on the upside, the XenServer 6 beta shows added guest OS improvement. :)
